Last night we went to the Smokehouse, which is more or less just round the corner from our house. It is well worth a visit but I don’t go anything like as often as I should.
We had an excellent steak (cote de boeuf) and I had bone marrow to start. Their meat all came from the same farm and I really liked this diagram explaining all the different cuts. A long time ago I bought a copy of Fergus Henderson’s Nose to Tail Eating, which is a pleasure to read. Unfortunately I haven’t made anything out of it because my husband said that offal can only be cooked superbly or it is inedible – I think this means he’s not going to eat any of the experiments that go wrong.
